This year we have prepared goose specialties for you, which you will be able to enjoy not only on St. Martin's Day, but from November 7th until the end of the week. Of course, you can look forward to the Confit Goose, St. Martin's wines and much more.
We would love to have this holiday, which is celebrated by eating half a goose with cabbage and dumplings, more than once a year, but I guess we will have to wait a while for that. In the meantime, we will eagerly await the date of 11.11. every year and prepare for it diligently. For now, you can taste our St. Martin's Day menu from 7.11. to 12.11. at any time during our opening hours. And what delicacies will we be dazzling you with this year?
For starters, we will serve you goose terrine. A mixture similar to foie gras pâté will be served grilled together with nutty brittle and caramelized apple. To accompany this French speciality, we will also bake for you the original Belgian bread Cramique with raisins, which is very popular in the north of France. It is a type of brioche pastry, so it does not lack the light sweetness, softness and aroma of butter.
We will prepare goose kaldoun as a soup - a thick broth made from goose bones, meat and offal, which is thickened before serving. You can enjoy it with kale, carrots and bread dumplings.
Within the main courses, you can choose from two options and surprisingly it won't be a double goose! The first option is classic. A confit quarter of goose that will crumble on your tongue with onion white cabbage and red plum jam cabbage. They will be accompanied on the plate by a pajfalian bacon dumpling, which is prepared similarly to the Carlsbad one made from buns. If you visit us in the company of more people, or if you are starving, you can also order a baking dish with a whole confit goose and adequately enlarged portions of side dishes. The second, slightly unconventional variant of the main course is the Fallow deer back with foie gras. Along with this, you'll enjoy a super autumn rosehip sauce with classic potato dumplings.
At the end of this feast, we have Potato Lokshe filled with macerated plums with quark plum jam and homemade poppy seed ice cream.
