You can start with venison tartare. Tender loin with capers, shallots, and a hint of coarse mustard literally melts in your mouth. And when we add Iberico pork cracklings and a dash of spruce oil, you have a dish with a modern twist. Served with toasted buttermilk bread.

To warm you up, we recommend our wild game goulash soup. Strong, aromatic, and filled with quality ingredients. Juniper and fresh marjoram give it the perfect touch of the Czech woodlands.

How about a classic with a modern twist? Our venison schnitzels marinated in garlic and herbs are a beloved hunting classic, but try drizzling them with burnt lemon, and you'll see how that elevates them to a whole new level of flavor. For a side, we have mashed potatoes with butter and parsley.

We've added pickled vegetables and paired it with gingerbread dumplings that beautifully complement the sauce and cranberries.
